Mr. Ansley Tang is always MR. K.P.O, especially when comes to keeping the environment neat and clean! Nothing can escape from his big, round eyes!

He would pick up every strand of hair that he came across… He would take his little hanky and wipe every corner…

 
He would also tell you loudly when things are not put properly… And the CUTEST OF ALL, he would use his PIGGY BAT and treat it as a mop, and go around the house!

 
As Baby Ansley is growing bigger and stronger, his enthusiasm in helping up is growing bigger and stronger too! For a good reason, I will never say “NO” to my child, and we gave him the REAL THING ;P

 
Ansley was super excited when he received the Magic Clean mop! He will start to maneuver around the house quickly so as to ensure that he will be able to hit every corner!

 

I’M SO PROUD OF MY LITTLE HELPER!!!!

And to reward my LITTLE HARDWORKING HELPER, Darling and I have bought him a little gift for Christmas! Hope that Ansley will love it!

My first attempt for Carbonara is pretty much a failure! My eggs were cooked, and ended up, the sauce had a lumpy texture. The texture really affect the taste of the Carbonara!

And Darling really loves cream based pasta, so I decided to ATTEMPT CARBONARA AGAIN! I have searched different recipes and came out with my own version of CARBONARA!

Serving for 2

Ingredients:
- 1 bundle of spaghetti or any kind of pasta

- 6 slices of streaky bacon, cut into dice

- 2 slices of breakfast ham, cut into dice

- 4 tablespoon of grated parmesan cheese

- 2 eggs

- 1 clove of garlic, chopped finely

- ½ cup of heavy cream

Method:
1) Bring to boil a pot of water with some salt, and add in the pasta

2) Pan fried the bacon at the same time

3) Dish out the bacons once it turns crispy

4) Make use of the bacon oil and add in the garlic and breakfast ham

5) Add in the al dente pasta into the pan

6) Once the pasta and the ingredients are well mixed, add in the heavy cream

7) Turn off the fire on the stove when the heavy cream is heated up

8) Add in the eggs and grated parmesan immediately

9) Mixed well and serve

Darling and I both love the CARBONARA! All the effort is worth it!

Just a note… Original Carbonara only contains egg, cheese and bacon. BUT I love to have more sauce in my pasta, so I added the heavy cream! So UP TO YOU!

It was Pretty Crazy with Ansley over the weekend! He was literally whining non-stop, especially on Sunday!

 
Carry… Hug… Scold…. Sayang…. We have tried everything single thing we could, but he simply don’t stop!

The interesting thing out of the WHINY SAGA is that Ansley is actually a very sweet and sensitive kid! He seems to know when is the right time to whine and when to stop.

During our Sunday Class at HAPPY TRAIN, he was whining in the beginning. But when his classmates are crying and behaving hysterically, he JUST STOP! He seems to understand that he should not add-on to the tension in the classroom.

After class, we went home and I started cooking for dinner! Cooking two different types of Carbonara – Popi version and Baby version – almost drives me crazy! Saw my hectic action in the kitchen through the glass door, Ansley seems to know that Momi is busy. Instead of whining, he starts turning circle to show me and giggle as he turns… SO CUTE!

 
The SWEETEST MOMENT came during dinner! Dinner is served, but I need to feed Ansley first, so my food is left untouched. Halfway through feeding, Ansley started pointing and talk to me loudly! At first, I thought he is starting his whining regime. But he kept pointing at my pasta, so I asked, “Are you asking Momi to take my food?” and he nodded his head.

 
I AM SUPER TOUCH! Ansley is only 17.5 months old and yet he understand the concept of caring. And especially caring for Momi, I almost gone into tears!

Through this incident, I truly believe no matter how bad the day is, our child is like an angel to us! This little angels might be naughty, but they will love you and care for you no matter what!

Over the weekend, we have some friends coming over to our place for a steamboat gathering. And as usual, there is a lot of leftovers…. Meat…. Veggie…. Seafood….

I guess the easiest way to clear some of the stuffs is FRIED RICE! SELF CREATED Fried Rice – Spinach and Fish Fried Rice!

Serving for 2

Ingredients:
- 1 bowl of cooked rice (estimated 1 cup of rice)

- 1 bowl of snapper, diced

- 3 stalk of spinach, chopped

- 2 cloves of garlic, chopped finely

- 4 eggs

Seasoning (for the egg):
- 1 tablespoon of light soya sauce

- A dash of pepper

Seasoning (for the rice):
- 1 tablespoon of light soya sauce

Method:
1) Add oil in wok

2) Add in the garlic when the oil starts to heat up

3) Stir fried the snapper

4) Add in the spinach when the snapper is semi cooked

5) Add in the rice and stir in the light soya sauce till everything is well combined

6) Pour in the egg bit by bit and quickly stir fried to mix the rice and egg together

7) Dish and serve


PERSONALLY, I feel that the taste is pretty yummy! Hope you will like it too!
